Kari’s Scandinavian Restaurant is the newest spot in downtown Lanesboro, Minnesota, moving into the space vacated by The Vintage when it closed in October. While the restaurant is a new concept, the folks behind it are familiar: Owners are Scott and Angie Taylor of Pedal Pushers Cafe. Scott Taylor says that they’re trying out new dishes every weekend, many of them based on family recipes from chef Marina Ludwigson.

T’was quite a magical event as the soup stone was dropped into the pot and the many bearers of vegetables formed a long line, adding, one-by-one their special ingredients to the local broth.
     The soup was remarkably tasty. The evening, a generous gathering at Lanesboro’s beautiful Sylvan Park.  Everyone contributed generously to the future of local foods in Lanesboro, Minnesota.

       We are already looking ahead at the many ways our second annual Stone Soup Supper could involve even more families, even more young gardeners, even more food enthusiasts from near and far.

The event was coordinated through a non-profit group, Lanesboro Local.

Lanesboro Local connects local growers, producers and artisans with consumers and businesses who value the extra special care and creativity that go into producing our local bounty. We hope you enjoy the selection of fresh, nutritious foods and handcrafted items that invite consumers from near and far to “live local” and live well.
